Best Icebox Pies

If warmer days make you long for cool desserts, then these incredible icebox pies are for you! As much as I love baked goods warm from the oven, I have quite a weakness for no-bake or low-bake desserts served chilled from the refrigerator. Their simplicity, flavors, and textures are unbeatable!
Some of these recipes require no baking at all, while some require just a few minutes of oven time. Either way, the results are cool, creamy, refreshing icebox pies that will serve you happily and deliciously all summer long!
And here a few more great icebox pies from some of my favorite food bloggers:
- Peanut Butter Banana Cream Pie from Eats Well with Others
- No-Bake Reese’s Oreo Pie from bethcakes
- Salted Caramel Peanut Butter Cream Pie from Girl Versus Dough
- Cherry Cream Pie in a Jar from Confessions of a Cookbook Queen
- Toasted Coconut Caramel Cream Pie from The Baker Chick

Jennifer, a couple of these sound right up my alley, but I’m watching calories very closely these days. Have you (or have any of your readers) tried swapping in Greek yogurt for the sour cream in, say, the strawberry pie? Or the peanut butter chocolate chip pie? Anything you’d recommend changing in the recipe to account for such a swap?
Hi, Terry. I’ve not tried that substitution, but it seems to work as a straight substitution from what I’ve read. If you try it, be sure to let me know how it works.
I made a double batch of the jam filled muffins today. They turned out awesome!!
Jennifer, what a fantastic looking roundup! I absolutely love icebox pies, and all of these look so tempting, I can’t decide which one to make first! : )
I don’t know how I just now saw this, but thanks for linking to my pie! Awesome round up!
