What You’ll Need

  • All-purpose flour – Measure by weight or use the spoon and sweep method for accuracy. Learn more: How to Measure Flour
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter – Let this soften at room temperature until it’s the appropriate consistency for creaming. Learn more: How to Soften Butter
  • Granulated sugar
  • Brown sugar – I prefer light brown sugar here, but you can use dark brown sugar if that’s your preference. Be sure to measure by weight (my preferred method) or pack it tightly in the measuring cup.
  • Eggs – Let these come to room temperature for easier mixing.
  • Vanilla extract – I like to use my homemade vanilla extract, but you can use your favorite store-bought variety.

How to Make Waffle Cookies

  • Prep waffle maker. Heat to low according to your waffle’s instructions.
  • Mix dry ingredients. Whisk the flour, baking powder, baking soda, and salt.
  • Mix wet ingredients. Beat the butter and both sugars, and then mix in the eggs and vanilla.
  • Finish mixing. Gradually add the dry ingredients to the wet ingredients, and mix just until combined.
  • Portion and cook. Drop tablespoonfuls of cookie dough onto the waffle maker and cook about 3 minutes until golden brown.
  • Cool. Carefully remove them and let cool on a wire rack.

What Kind of Waffle Maker Should I Use?

Classic waffle makers tend to work best because their shallow grid pattern gives the cookies the perfect balance of crispiness and chewiness. The smaller, evenly spaced squares create cookies that cook through without becoming too thick. If you only have a Belgian waffle maker, that may work but keep in mind that the larger grid pattern will create thicker, softer cookies. Avoid crepe-style waffle makers that have very shallow grids as well as waffle makers with very deep grids or intricate designs.

Tips for Success

  • Use a cookie scoop. It will make portioning quick and help ensure that your cookies are all the same size for even cooking.
  • Don’t over-cook. Your cookies should be lightly browned and soft. They will become more crisp as they cool.
  • Remove with care. The cookies are a bit delicate when removing them from the waffle iron. My preferred method for removing them is to press a toothpick into the side to lift the cookie a bit and then use tongs to remove them from the iron and onto a cooling rack.
  • Adjust. Not all waffle makers will give the same results, so you may need to tweak the time to get your waffle cookies just right. I’ve listed a time range in the recipe below, so you can use that as a guide.

Variations and Serving Suggestions

There are many, many ways to customize your waffle cookies. You can even divide the batter and make a few variations!

  • Chocolate chips (pictured above) – Mix a handful of mini chocolate chips into the batter.
  • Nuts – For a nutty, crunchy option, finely chopped nuts are the way to go. Pecans, walnuts, hazelnuts, or another favorite would all work well.
  • Sprinkles – Make them festive and fun with some jimmie-style sprinkles.
  • Confectioners’ sugar – Sprinkle your waffle cookies with a simple dusting of confectioners’ sugar (also known as powdered sugar) when serving.
  • Glaze – Top with a simple glaze to dress them up a bit. The glaze from my apple strudel is a classic choice, or play up the waffle theme with a maple glaze.
  • Spreads – Much like traditional waffles, these waffle cookies are delicious with a smear of peanut butter, cookie butter, dulce de leche, or Nutella.
  • Dessert dips. Serve these cookies alongside a dessert dip like cheesecake dip, brownie batter dip, or snickerdoodle dip.
  • Ice cream – For an all-out dessert experience, make an ice cream sundae with your waffle cookies! Add a scoop or two of ice cream and top with hot fudge sauce, caramel sauce, blueberry compote, apple compote, nuts, sprinkles, or any other favorite ice cream toppings.

How to Store

While waffle cookies are best when they’re freshly made, you can store them if needed. Store them in an airtight container up to 3 days. Place parchment paper between layers to help prevent sticking. You can also store them in the refrigerator up to 5 days for a firmer texture or if your kitchen is warm. Just make extra sure that the container is airtight.

Can Waffle Cookies Be Frozen?

Yes, you can freeze waffle cookies. Let your waffle cookies cool completely, then place them in a single layer on a baking sheet and freeze until solid (2-3 hours). Once frozen, transfer them to a freezer-safe bag or container and store for up to 3 months. To enjoy, let them thaw at room temperature, or heat them in the microwave for a few seconds to warm them.

Ingredients

  • 2 & 1/2 cups (300g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) firmly packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • confectioners' sugar, for optional garnish

Instructions

  1. Preheat the waffle maker to low heat according to the manufacturer’s instructions.
  2. Whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  4. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Be careful not to over-mix.
  5. If desired, fold in any optional mix-ins like chocolate chips, nuts, or sprinkles.
  6. Drop tablespoonfuls of dough onto the preheated waffle maker, spacing them out as you would for regular waffles. Close the waffle maker and cook for about 2 to 3 minutes, or until the cookies are golden brown and cooked through.*
  7. Carefully remove the cookies from the waffle maker and let them cool on a wire rack. Repeat with remaining dough. Serve warm or at room temperature.
  8. Garnish if desired with confectioners’ sugar.

Notes

*Times will vary with different waffle makers and how brown you want your cookies. The cookies should be soft but will become crisp as they cool.
