  • Blackberries – I prefer using fresh blackberries here, but see my note below if you’re using frozen berries.
  • Granulated sugar – You’ll need sugar for both the filling and the topping.
  • Lemon – The tangy flavor of lemon complements the sweetness of the blackberries and also helps maintain the color of the berries.
  • Cornstarch – This will help thicken the filling. You can omit it if you don’t have any on-hand, but just keep in mind that your filling will be thinner.

  • Baking powder
  • Salt
  • Unsalted butter – Melt this and let it cool slightly before mixing.
  • Milk – I like to use whole milk, but 2% should also work fine. Non-dairy milks may work as well but may affect the texture and flavor.

Can I Use Frozen Blackberries?

To use frozen blackberries in this blackberry cobbler recipe, simply thaw them first and drain any excess liquid to prevent the cobbler from becoming too watery. Expect the filling to be slightly juicier compared to using fresh blackberries, and the berries might break down a bit more during baking. However, the flavor will still be delicious.

How to Make Blackberry Cobbler

  • Prepare for baking. Heat the oven to 350°F and grease the baking pan.
  • Mix the filling. Stir together the blackberries, sugar, cornstarch, lemon juice, and lemon zest.

Ingredients

For the filling:

  • 4 cups (600g) fresh blackberries
  • 1 cup (200g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest

For the topping:

  • 1 cup (120g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, melted
  • 1/2 cup (118ml) milk

Instructions

To make the filling:

  1. Preheat the oven to 350°F. Grease a 9-inch square baking dish or a similar pan with about a 2-quart capacity.
  2. Combine the blackberries, sugar, lemon juice, and cornstarch.

To make the topping and assemble:

  1. In another mixing bowl, combine the flour, sugar, baking powder, and salt. Stir in the melted butter and milk until the batter is smooth and well combined.
  2. Transfer the filling mixture to the prepared pan. Drop the batter by spoonfuls over the blackberry mixture. Try to distribute it somewhat evenly, but it will spread during baking.
  3. Bake in the preheated oven for 45 to 50 minutes, or until the top is golden brown, the filling is bubbly, and a toothpick inserted into the topping comes out clean.
  4. Allow the cobbler to cool for about 10 to 15 minutes before serving.

Notes

To store: Tightly cover the cooled cobbler or transfer to an airtight container. Refrigerate up to 3 days.
