Think of this cake as a cozy twist on a classic vanilla sheet cake. Brown sugar gives it a richer, warmer flavor while keeping the sweetness nicely balanced. Add a soft, tender crumb and a generous layer of vanilla buttercream, and you’ve got a cake that’s simple but a little different from the usual.

I love finishing it with chopped chocolate. Besides adding a little contrast to the sweet frosting, it brings out some of those buttery, brown sugar flavors that remind me of a chocolate chip cookie.

And because it’s baked in a 9×13-inch pan, it’s easy to make and share. No special occasion required!

Tips for a Soft, Tender Cake

This cake comes together using a traditional creaming method. A few simple details will help you get the best results.

  • Cream the butter and sugars until light and fluffy. The mixture should become noticeably lighter in color and fluffy, usually after about 4 to 5 minutes. This helps give the cake its soft texture.
  • Use room-temperature ingredients. Softened butter plus room-temperature eggs, buttermilk, and sour cream will combine more smoothly for an even batter.
  • Mix gently once you add the flour. Alternate the dry ingredients with the buttermilk mixture, mixing just until combined. Over-mixing at this stage can make the cake less tender.
  • Check the center for doneness. The cake should spring back lightly when touched, and a tester inserted into the center should come out with a few moist crumbs. Make sure the center is fully baked before removing the cake from the oven.

Vanilla Buttercream and Topping Ideas

The frosting is a simple vanilla buttercream with just a tiny bit of almond extract. That little addition rounds out the flavor without making the frosting taste distinctly of almond. If you prefer, you can leave it out and use vanilla alone.

I like to spread the buttercream over the cooled cake in generous swoops, then scatter chopped semisweet or bittersweet chocolate over the top. The chocolate adds a nice contrast to the sweet frosting, and some bites have a flavor that reminds me a little of a chocolate chip cookie!

Of course, you can leave the frosting plain or try another topping:

  • Toasted pecans or walnuts for a little crunch and nutty flavor.
  • Toffee bits for extra buttery sweetness.
  • Flaky salt for a sweet-and-salty contrast.
  • Sprinkles for a festive touch.

You can also combine toppings, like chopped chocolate and toasted pecans, for a little extra texture and flavor.

How to Store

Room temperature: Store the frosted cake in an airtight container at room temperature for up to 2 days, as long as your kitchen is cool.

Refrigerator: For longer storage or if your kitchen is warm, cover and refrigerate the cake for up to 5 days. Let the cake come to room temperature before serving so the buttercream softens and the cake has its best texture.

Freezer: If freezing frosted slices, place them in the freezer briefly to firm up the frosting. Then wrap the slices well and place them in a freezer-safe container. Freeze for up to 2 months. Thaw overnight in the refrigerator, then bring to room temperature before serving. You can also freeze the cake unfrosted and add the buttercream after thawing.

Ingredients

For the cake:

  • 3 cups (360 g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • ¾ cup (170 g) unsalted butter, softened
  • 2 cups (400 g) firmly packed light brown sugar
  • ½ cup (100 g) granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240 ml) buttermilk, at room temperature
  • ¼ cup (56 g) sour cream, at room temperature

For the frosting:

  • ¾ cup (170 g) unsalted butter, softened
  • 3 cups (330 g) confectioners’ sugar, sifted if needed
  • 2 to 3 tablespoons (30 to 45 ml) heavy cream
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon almond extract
  • pinch salt
  • chopped semisweet or bittersweet chocolate or chocolate curls, for garnish

Instructions

To make the cake:

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch metal baking pan and line with parchment if desired.
  • Whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Using an electric mixer on medium speed, beat the butter, brown sugar, and granulated sugar until noticeably lighter in color and fluffy (4-5 minutes).
  • Mix in the eggs one at a time, followed by the vanilla.
  • Stir together the buttermilk and sour cream until smooth.
  • Add the flour mixture in three portions, alternating with two portions of the buttermilk mixture. Mix just until combined.
  • Spread the batter evenly in the prepared pan.
  • Bake 35 to 40 minutes, or until the cake springs back lightly and a tester inserted into the center comes out with a few moist crumbs.
  • Cool completely.

To make the frosting:

  • Using an electric mixer on medium speed, beat the butter until light and fluffy.
  • Add the confectioners’ sugar, and mix until combined.
  • Mix in 2 tablespoons (30ml) of the cream, both extracts, and salt. If needed, add a small amount of cream at a time to reach a spreadable consistency.
  • Frost the cooled cake. Sprinkle chopped chocolate or chocolate curls (or another garnish) over the top of the frosting.

Notes

  • Brown sugar: Light brown sugar is recommended for the best flavor balance. Dark brown sugar will give the cake a stronger molasses flavor.
  • Room-temperature ingredients: For the smoothest batter, use softened butter and room-temperature eggs, buttermilk, and sour cream.
  • Almond extract: The small amount in the frosting adds subtle flavor without making it taste distinctly like almond. You can omit it if you prefer.
  • Toppings: Chopped semisweet or bittersweet chocolate is optional. You can also use toasted pecans or walnuts, toffee bits, a sprinkle of flaky salt, or sprinkles.
  • Servings: This cake slices neatly into 24 squares, but you can make different size slices to suit your neads.
  • Storage: Store airtight at room temperature for up to 2 days or refrigerate for up to 5 days. Bring refrigerated cake to room temperature before serving.
