If you love pecan pie and cheesecake, you’ll adore these bars that bring together the best of both desserts! Dark brown sugar gives the smooth, creamy cheesecake a subtle caramel flavor, while sour cream adds just enough tanginess to balance the rich pecan topping.

And that topping is something special. It’s buttery, gooey, and packed with toasted pecans, but it holds together beautifully when chilled. You get all that wonderful pecan pie flavor in bars that are easy to slice, serve, and make ahead for the holidays.

Why You’ll Love These Pecan Pie Cheesecake Bars

  • Pecan pie flavor in every bite. Dark brown sugar adds a rich, caramel-like flavor to both the cheesecake and the pecan topping.
  • A delicious combination of textures. The smooth, creamy cheesecake contrasts with the gooey topping and crunchy toasted pecans, all on a buttery graham cracker crust.
  • Gooey without being messy. The pecan topping stays soft but holds together well, so the bars slice neatly after chilling.
  • Perfect for making ahead. These bars need time to chill, making them a great choice for those times when you want to get dessert ready in advance.

A Few Ingredient Notes

Most of the ingredients are familiar cheesecake and pecan pie staples, but a few are especially important to the flavor and texture of these bars.

  • Dark brown sugar: Using dark brown sugar in both the cheesecake and topping gives these bars a deeper, richer flavor. It also gives the cheesecake a lovely caramel color that complements the pecan topping.
  • Sour cream: Adds a little tanginess that balances the sweetness of the brown sugar and topping. It also helps make the cheesecake wonderfully smooth and creamy.
  • Light corn syrup: A small amount helps keep the pecan topping smooth and discourages sugar crystallization.
  • Pecans: Toasting the pecans brings out their nutty flavor. Chop them into relatively small pieces so they’re easier to spread evenly over the cheesecake and cut into bars.

How to Make the Pecan Pie Topping

The graham cracker crust and cheesecake filling are both straightforward to prepare. The pecan topping deserves a little extra attention because its consistency is the key to getting that perfect gooey texture without making the bars difficult to slice.

Cook the caramel mixture. Melt the butter in a saucepan, then add the dark brown sugar, heavy cream, corn syrup, and salt. Bring the mixture to a gentle simmer, stirring frequently, and cook just until it thickens enough to coat a spoon. You want it slightly thickened but still fluid, so avoid cooking it too long.

Add the pecans. Remove the saucepan from the heat and stir in the vanilla and toasted, chopped pecans. The mixture should be glossy, with enough caramel to coat the pecans and fill the spaces between them.

Cool briefly and spread. Let the topping cool for about 10 minutes, stirring occasionally. Spoon it over the warm cheesecake and gently spread it into an even layer.

The topping should still be soft and easily spreadable when you add it to the cheesecake. It will thicken as it cools and firm up further during refrigeration, so don’t wait until it looks thick and stiff before spreading it.

Tips for Success

  • Start with softened cream cheese. This helps the filling mix smoothly without lumps. Depending on the temperature of your kitchen, softening blocks of cream cheese will usually take at least 30 minutes. You can speed that up considerably by cutting the blocks into small pieces.
  • Don’t over-mix the batter. Once you add the eggs, mix on low speed just until they’re incorporated to avoid adding too much air.
  • Don’t over-bake the cheesecake. The edges should be set, but the center should still have a slight wobble when you remove it from the oven. The cheesecake will continue to set as it cools.
  • Use a sharp, warm knife for clean slices. Wipe the blade between cuts to keep the layers looking neat. Lifting the chilled bars out of the pan using the parchment overhang also makes cutting easier.

Storage and Make-Ahead Tips

These cheesecake bars are ideal for making a day ahead. The cheesecake and pecan topping both need time to set, so refrigerate the finished bars for at least 6 hours, preferably overnight.

Refrigerator: Store the bars in an airtight container in the refrigerator for up to 4 days. Keep them chilled until you’re ready to serve.

Freezer: The cheesecake portion should freeze well, although the pecan topping may change texture after thawing. For that reason, I’d recommend freezing them with caution.

  • ¾ cup (150 g) granulated sugar
  • ¼ cup (50 g) firmly packed dark brown sugar
  • ½ cup (113 g) sour cream, at room temperature
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 2 large eggs, at room temperature
  • 1 large egg yolk, at room temperature

For the topping:

  • 6 tablespoons (85 g) unsalted butter
  • 1 cup (200 g) firmly packed dark brown sugar
  • ½ cup (120 ml) heavy cream
  • 3 tablespoons (45 ml) light corn syrup
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • 3 cups (about 330 g) pecans, toasted and chopped into roughly 1/4- to 3/8-inch pieces

Instructions

To make the crust:

  • Preheat the oven to 325°F (160°C). Line a 9×13-inch baking pan with parchment, leaving an overhang on the two long sides.
  • Stir together the crumbs, brown sugar, and salt. Then stir in the butter until evenly moistened.
  • Press the mixture firmly and evenly into the bottom of the pan.
  • Bake 10 minutes, then cool slightly while making the filling.

To make the filling:

  • Using an electric mixer on medium speed, beat the cream cheese until smooth.
  • Add both sugars, and mix until combined. Then mix in the sour cream, vanilla, and salt.
  • Add the eggs one at a time, followed by the yolk, mixing on low just until incorporated.
  • Spread the batter evenly over the crust.
  • Bake 30 to 35 minutes, or until the edges are set and the center has a slight wobble.
  • Cool 20 to 30 minutes while preparing the topping.

To make the topping:

  • Melt the butter in a medium saucepan over medium heat.
  • Add the brown sugar, heavy cream, corn syrup, and salt, and stir to combine.
  • Bring to a gentle simmer. Cook 2 to 3 minutes, stirring frequently, until the mixture thickens enough to coat a spoon.
  • Remove from the heat. Stir in the vanilla and pecans.
  • Let cool 10 minutes, stirring occasionally. The pecans should be suspended in a loose, glossy caramel with visible caramel between pieces. It should spread somewhat easily.

To assemble:

  • Spoon the topping evenly over the warm cheesecake. Gently spread with an offset spatula, being careful not to disturb the cheesecake layer.
  • Cool to room temperature.
  • Refrigerate at least 6 hours, preferably overnight.
  • Lift from the pan and cut with a sharp, hot knife, wiping the blade clean between cuts.

Notes

  • Room temperature ingredients: Bring the cream cheese, sour cream, and eggs to room temperature before mixing for a smooth, creamy filling.
  • Toasting the pecans: Spread the pecans in a single layer on a baking sheet and toast at 350°F for 7–9 minutes, or until fragrant. Let cool before chopping.
  • Topping consistency: The caramel should be thick enough to coat a spoon but still fluid. It will thicken as the bars chill, so avoid cooking it too long.
  • Chilling: Refrigerate for at least 6 hours, preferably overnight, before slicing.
  • Storage: Keep the bars in an airtight container in the refrigerator for up to 4 days.
