How to Make Peach Cheesecake Jars
Make the peach compote.
Cook the peaches with the sugar, lemon juice, and salt until they’re softened and the juices have thickened. You’re looking for a mixture that’s thick, glossy, and still a bit chunky. Stir in the lemon zest, vanilla, and almond extract, then cool completely before assembling the jars.


Prepare the crust.
Mix the graham cracker crumbs with the melted butter, brown sugar, cinnamon, salt, and pecans, if using. Divide the mixture among your jars and press it lightly into the bottom — you want it compact enough to hold together but not firmly packed.
Make the cheesecake filling.
Beat the cream cheese with the sugar, vanilla, and lemon zest until completely smooth. In a separate bowl, whip the heavy cream to soft peaks, then gently fold it into the cream cheese mixture until light and creamy. Folding whipped cream into the filling keeps it light and fluffy instead of dense like a traditional cheesecake.


Assemble the jars.

- Start with softened cream cheese. Room-temperature cream cheese blends much more smoothly, helping you avoid lumps in the filling.
- Whip the cream to soft peaks. Soft peaks fold more easily into the cream cheese mixture, creating a light, fluffy filling instead of a dense one.
- Toast the pecans. If you’re adding the optional pecans, toasting them first brings out their flavor and adds even more crunch.

How to Store
Cover the jars and refrigerate for up to 3 days. They’re a great make-ahead dessert, as the flavors continue to come together while they chill.
For the best texture, wait to add any chopped toasted pecans until just before serving so they stay crisp.
I don’t recommend freezing these cheesecake jars. The creamy filling and fresh peach compote can become watery and lose their smooth texture after thawing.

For the peach compote:
- 2 cups peeled, chopped peaches, about 2-3 peaches

- Divide among jars and press lightly into the bottom.
To make the cheesecake filling:
- Using an electric mixer on medium speed, beat the cream cheese, sugar, vanilla, and lemon zest until completely smooth.
- In a separate bowl, whip the cream to soft peaks using an electric mixer with a whisk attachment.
- Fold about a third of the whipped cream into the cream cheese mixture to loosen. Then gently fold in the remaining whipped cream, mixing only as much as needed to combine fully.
To assemble:
