Ingredients

For the cake:

  • 1 cup (120g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup (170g) blueberries

For the frosting:

  • 2 ounces (56g) cream cheese, at room temperature
  • 2 & 1/2 tablespoons (35g) unsalted butter, softened
  • 1/4 teaspoon vanilla extract
  • 1 to 1 & 1/2 cups (110-165g) confectioners’ sugar, sifted
  • 2-3 tablespoons chopped nuts, for garnish

Instructions

To make the cake:

  1. Preheat oven to 350°F. Grease and flour a 9- inch round or 8-inch square cake pan.
  2. Whisk together the flour, baking powder, and salt. Set aside.
  3. Using an electric mixer on medium speed, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract.
  4. Reduce mixer speed to low. Gradually add flour mixture, mixing just until combined.
  5. Transfer the batter to the prepared pan. Scatter the blueberries over the top of the batter.
  6. Bake 45-50 minutes, or until a pick inserted into the center of the cake comes out clean.
  7. Cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

To make the frosting:

  1. Using an electric mixer on medium speed, beat the cream cheese, butter, and vanilla until thoroughly combined and smooth.
  2. Gradually add 1 cup confectioners' sugar, and mix well. Add more sugar to reach the desired consistency and flavor.
  3. Spread the frosting on the cooled cake. Sprinkle with nuts.
