I’ve made a lot of brownies in my baking life. A lot. Then, one day on a whim, I made these brownies. Oh, my.

These are really just your basic brownies. No add-ins, just brownies. But, two little adjustments turn them into something amazing.

First of all, instead of just melting the butter, I browned it. Browned butter has such a fantastic nutty flavor, and I could not love it more. I also used all brown sugar, which adds a whole different level of flavor than you’d get from granulated sugar. So, there we get to the origin of their name — Brown (Butter) Brown (Sugar) Brownies. Seriously, how fun is it to say Brown Brown Brownies?

Yield 16 2-inch brownies
Prep Time 30 minutes
Cook Time 40 minutes

Ingredients

  • 10 tablespoons unsalted butter, cut into tablespoons
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup packed light or dark brown sugar
  • 2 large eggs
  • 1 & 1/2 teaspoons vanilla extract

Instructions

  1. Place butter in a medium saucepan. Heat over medium heat, stirring frequently, until butter begins to foam. Continue cooking until brown specks begin to form at the bottom of the pan. Remove from heat and pour into a large mixing bowl and allow to cool.
  2. Preheat oven to 350°. Grease an 8-inch square baking pan. Line with parchment paper so that the paper overhangs on two opposite sides.
  3. Whisk together flour, cocoa, and salt. Set aside.
  4. Add brown sugar to cooled butter in mixing bowl. Beat until combined. Add eggs, one at a time, mixing well after each addition. Mix in vanilla.
  5. Gradually add flour mixture, mixing just until combined.
  6. Transfer batter to prepared pan. Bake 30-35 minutes, or until a pick inserted into the center comes out with moist crumbs. Cool completely in pan. Then, using the overhanging parchment, lift out the brownies onto a cutting board. Cut into bars.

  28. Hi, I made these today and they turned out very dry. I double checked everything and lessened the baking time but something is not right???

  29. I tried making these, from start to finish-really not every good. I made sure I checked my ingredients and measurement, everything was right, but these came out down right gross. They were way to dry, and tasted like I licked the cocoa powder jar, and honestly browning the butter didn’t really add anything to them. I’ll sick to my other recipes I got from Culinary school.

  30. Everything I’ve ever baked from this site has been a total success, until these! The batter tasted so good, but it was so dry after adding in all of the flour and cocoa, I could hardly get it into the pan to bake. I pulled them out start 25 min and they are pretty flavorless. Such a waste of ingredients during social distancing!
