Peanut Butter White Chocolate Blondies
Soft and chewy peanut butter white chocolate blondies made with creamy peanut butter, brown sugar, and white chocolate chips. These easy blondie bars bake in one pan and have the perfect balance of sweet and nutty flavor.
Ingredients
- 1 ½ cups (180 g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup (113 g) unsalted butter, melted and slightly cooled
- 1 ½ cups (300 g) firmly packed light brown sugar
- ½ cup (127 g) creamy peanut butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (170 g) white chocolate chips or chunks

Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch square baking pan.
- Whisk together the flour, baking powder, cinnamon, and salt. Set aside.
- Using an electric mixer on medium speed or mixing by hand, combine the butter, brown sugar, and peanut butter. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla.
- If using a mixer, reduce the speed to low. Gradually add the flour mixture, mixing just until combine. Stir in the white chocolate chips.
- Spread the batter evenly in the prepared pan. Bake 35 to 40 minutes, or until a pick inserted into the center comes out with a few moist crumbs attached.
- Cool completely in the pan before cutting into bars.
Notes
- Use regular, shelf-stable peanut butter for the best results.
- Store in an airtight container at room temperature up to 3 days.
