These baked Pancake Muffins are a wonderfully quick and easy way to make a batch of pancakes to enjoy for breakfast or for a snack!

Instructions
Preheat oven to 350°F (175°C). Grease 12 cups of a standard muffin pan. Alternatively, line the cups with paper liners.
Whisk together the flour, sugar, baking powder, and salt. Make a well in the center.
In a separate bowl, combine the eggs, milk, maple syrup, butter, and vanilla. Add to the flour mixture, and stir just until combined.
Divide the batter evenly among the prepared muffin cups. Top each with your favorite toppings.
Bake 20-25 minutes, or until the edges of the muffins are browned and a pick inserted into the center comes out clean.
Cool in the pan for about 10 minutes. Then remove the muffins from the pan to cool completely, or serve immediately.
Dust with confectioners' sugar if you like, and serve with more maple syrup.
