Instructions
Line baking sheets with parchment paper. Set aside.
Place the brown sugar, milk, and butter in a large saucepan. Cook over medium heat, stirring occasionally, until the butter has melted.
Increase the heat to medium-high, and bring to a boil. Boil for 1 minute.**
Remove the pan from the heat, and stir in the peanut butter, vanilla, and salt. Stir until smooth.
Stir in the oats.
Drop by tablespoonfuls onto the prepared pans, leaving about an inch between cookies.
Refrigerate 1 hour, or until set.
Notes
*These cookies definitely fall into the sweet and salty category. If you prefer a less salty flavor, reduce the salt to suit your tastes.
**You can use a candy thermometer and cook the mixture to 230°F (110°C).
