Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone liners.
Sift together the confectioners' sugar, cocoa powder, and salt into a large bowl. Set aside.
Whisk the egg whites until frothy. Stir the egg whites and vanilla into the sugar mixture. The batter will be very thick.
Stir in the chopped chocolate and nuts.
Drop the cookies by 2-tablespoon portions onto the prepared pans, leaving about 3 inches between cookies.
Bake 8 to 10 minutes, or until the tops of the cookies are shiny and cracked. Don't overbake to keep them from being dry.
Cool the cookies on the pans for 5 minutes. Then transfer the cookies to wire racks to cool completely.
