Date balls are a simple no-bake treat filled with lots of flavor and crunch! Sweet and light and rolled in coconut or powdered sugar for some festive flair.
In a saucepan over medium heat, combine the egg, sugar, butter, salt, and dates. Cook, stirring frequently, until the dates are soft and the mixture is thick. This will take 8 to 10 minutes.
Place the saucepan in cold water until the mixture is cool enough to handle. It will need about 5 to 7 minutes.
Stir the cereal and pecans into the date mixture.
Working quickly, shape tablespoon-size portions into balls. Roll each ball in coconut or confectioners' sugar. Place on parchment paper or waxed paper to cool and set.
