This sweet, creamy blackberry ice cream is a summertime favorite! With its short list of ingredients and easy preparation, you'll enjoy it all throughout the season!
Place a 9" x 5" loaf pan or other similarly sized container in the freezer.
Place the blackberries, sugar, lemon juice, and vanilla extract in the bowl of a food processor. Pulse until smoothly blended. If you like, strain the mixture through a fine mesh sieve.
In a separate bowl, whip the cream with an electric mixer with a whisk attachment until thickened to soft peaks.
Add the blackberry puree to the whipped cream, and continue whipping just until combined. Be sure not to over-mix.
Spread the mixture evenly in the prepared pan. Cover and freeze at least 5 hours before serving.

Store in an airtight container in the freezer up to 2 weeks.
