This creamy ricotta mousse is light, gently sweetened, and so easy to make. With just a handful of ingredients and no baking required, it’s the perfect make-ahead dessert for spring and summer.

Instructions
In a food processor or blender, combine the ricotta, honey, vanilla, zest, and salt.
Blend until smooth and creamy. Add the cream and blend again if you’d like a fluffier texture.
Taste and adjust sweetness or flavoring if needed.
Divide into small serving glasses or ramekins. Chill for at least 1 hour before serving.
Notes
Store tightly covered in the refrigerator up to 3 days.
