This easy peach compote is a sweet, juicy topping that comes together in minutes. Made with fresh peaches, sugar, and a touch of lemon, it’s perfect for spooning over pound cake, ice cream, yogurt, and more.
Combine the peaches, sugar, lemon juice, and salt in a medium saucepan. Let sit for 5–10 minutes to draw out the juices.
Cook over medium heat, stirring occasionally, for 8–10 minutes, or until the peaches are softened and the juices are slightly thickened. For a saucier compote, cook a bit longer.
Remove from the heat and stir in the vanilla extract, if using.
