Instructions
Stir together the vanilla wafers, pecans, confectioners’ sugar, and cocoa powder in a large bowl.
In a separate bowl, combine the bourbon and corn syrup, and then add that mixture to the vanilla wafer mixture. Stir until combined.
Place the granulated sugar (or confectioners' sugar) in a shallow bowl or dish.
Scoop the vanilla wafer mixture by 1-tablespoon portions, and roll each into a ball. Then roll each ball in sugar, coating well.
Place the bourbon balls on a baking sheet or plate, cover, and refrigerate for about an hour or until firm.
Notes
Bourbon balls are even better after a day or two, making them a great make-ahead treat!
Store in an airtight container at room temperature or in the refrigerator up to a week.
