Whisk together the flour, baking powder, and salt.

Mix eggs and sugar

Beat the eggs lightly in a large mixing bowl. Add the sugar, and mix on medium-high speed until tripled in volume and white. This should take about 5 minutes.

Finish mixing

Slowly add the flour mixture, stirring just until combined. Gently mix in the milk, oil, vanilla, and melted butter until incorporated.

Portion and bake

Divide the batter evenly among the muffin cups, filling them about two-thirds full. Bake for about 25 minutes, or until the edges of the cupcakes are lightly browned and a toothpick inserted into the center comes out clean.
