With an electric stand mixer or hand mixer on medium speed, cream the butter and sugar until the mixture is fluffy and lightened in color. Mix in the egg and vanilla.

Add the flour and pistachios, and mix just until combined. The dough will be loose and crumbly, but it should hold together when pinched.

Divide and shape the dough

Place the dough on a lightly floured surface, and shape it into a ball. Divide it in half, and roll each portion into a log with a 2 to 3 inch diameter.

Chill the dough

Wrap each log of dough tightly in plastic wrap or parchment paper, and refrigerate for at least 2 hours.

Heat the oven to 350°F. Line baking sheets with parchment paper or silicone liners.
