With an electric stand mixer and the paddle attachment  (or a heavy-duty hand mixer), beat the butter and sugar on medium speed until fluffy and lightened in color.

Start mixing

Add the dry ingredients

Mix in the flour, baking powder, and salt just until combined. The dough will be crumbly but should hold together when pinched.

Divide the dough

Make two equal portions of the dough.

Finish the vanilla dough

Place half of the dough back into the mixing bowl. Add 1/2 tablespoon of the milk, and mix just until combined.

Finish the chocolate dough

Place the remaining dough in the mixing bowl. Add the remaining 1 tablespoon of the milk, the cocoa powder, and the espresso powder, if you’re using them.
