Step 1. Gather up your pie crust dough and roll it out.
Step 2. Use a small cookie cutter to cut out the dough. Re-roll and repeat until all the dough is used.
Step 3. Chill the cut out pie dough in the fridge for 30 minutes.
Step 4. Brush with egg wash and top with cinnamon sugar.
Step 5. Bake at 375ºF for 10-12 minutes.
