Sift together the flour, cornstarch, baking powder, baking soda, and salt.

Mix the dry ingredients

Mix the wet ingredients

With an electric mixer on medium speed, beat the confectioners’ sugar and butter until crumbly and lightened in color. Mix in the egg, sour cream, and vanilla.

Finish mixing

Add the dry ingredients to the wet ingredients, and mix on low speed just until combined. Use a spatula to stir the dough a few times to finish mixing.

Chill the dough

Cover and refrigerate the dough for an hour.

Prepare for baking

Heat the oven to 350°F. Line baking sheets with parchment paper or silicone liners.
