homemade oatmeal cream pies

These homemade oatmeal cream pies are made with soft, chewy oatmeal cookies sandwiched around a rich vanilla cream. These will beat the store-bought version, hands down!

These cookies are quite simple! You'll just need some basic cookie ingredients, plus butter, sugar, cream, and vanilla for the filling.

Step 1. Whisk the dry ingredients in a bowl, then stir in the oats.

Step 2. Use an electric mixer to cream the butter, sugar, and brown sugar.  Mix in the egg and vanilla.

Step 3. Slowly add the flour mixture to the dry ingredients, stirring until well-blended.

Step 4. Drop rounded tablespoonfuls of dough onto lined baking sheets.  Bake for 10-12 minutes.

Step 5. Use an electric mixer to combine filling ingredients. Increase mixer speed to high and beat until light and fluffy.

Step 6. Spread a tablespoon of filling on the bottom of half of the cookies.  Top with the remaining cookies to create sandwiches.

Step 7. Enjoy!  Fair warning: you may never go back to store-bought once you learn how to make these yourself.
