EARTHQUAKE CAKE

Forget the cake mix; we’re making earthquake cake from scratch! With ribbons of cream cheese, coconut, pecans, and plenty of chocolate flavor, this is definitely a cake that will rock your world.

In a medium bowl, beat the cream cheese, butter, and vanilla until smooth. Slowly beat in the confectioners’ sugar.

Preheat your oven to 350°F and grease a 9″ x 13″ baking pan.  Sprinkle the chopped pecans and shredded coconut on the bottom of the pan.

Mix the dry ingredients

In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt.

Finish the cake batter

Mix the eggs, buttermilk, oil, and vanilla extract into the dry ingredients, then stir in the boiling water. Pour this mixture over the pecans and coconut.

Add the cream cheese mixture

Dollop the cream cheese mixture over the cake batter, then use a thin knife to gently swirl it into the top of the cake batter, creating a marbled effect.
