These simple cookies have a very short ingredient list. Butter, confectioners' sugar, egg, vanilla, and flour are all you need!
Step 1. Beat the butter and confectioners' sugar until light and fluffy.
Step 2. Mix in the egg and vanilla. Reduce the mixer to low, then gradually mix in the flour until just combined.
Step 3.Transfer the dough to a pastry bag fitted with a large star tip. Pipe the dough into circles about 2 inches in diameter.
Step 4. Sprinkle the cookies with sanding sugar, then refrigerate for 15 minutes.
Step 5. Bake one pan at a time, for 14-18 minutes, until the edges are just browned. Let cool on the pan for 5 minutes.
