With an electric stand mixer (or heavy-duty hand mixer) on medium speed, beat the butter and sugar until fluffy and lightened in color. Mix in the eggs and vanilla.

Mix in the flour, baking powder, and salt.

Divide and chill the dough

Place the dough on a clean surface, and divide into two equal portions. Shape each portion into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour or up to 5 days.

Prepare for baking

Heat the oven to 350°F. Line baking sheets with parchment paper or silicone liners.

Roll out the cookie dough

Place the chilled sugar cookie dough on a floured surface. Use a rolling pin to roll the dough to 1/4- to 1/2-inch thickness.
