CHOCOLATE ECLAIR CAKE

Whisk together the pudding mix and milk. Whip the cream and fold it into the pudding mixture.

Make the filling

Layer

Place graham crackers in a single layer in the bottom of a 9″ x 13″ pan. Spread half of the pudding mixture over the top.

Make the ganache

Place the chocolate and corn syrup in a bowl. Heat the cream over medium-low heat until it comes to a simmer. Pour over the chocolate, let sit for 5 minutes, and then stir until smooth.

Chill

Refrigerate for 8 hours or overnight before serving.
