Whisk together the brown sugar, cornstarch, and salt in a heavy medium saucepan.

Add the liquids

Whisk in about 1/2 cup of milk, then add the remaining milk and cream, whisking to combine.

Boil

Bring the butterscotch pudding mixture to a boil over medium heat, whisking frequently. Boil, whisking constantly, for 1 minute.

Remove the pan from the heat and whisk in the butter and vanilla.

Chill

Pour the pudding into a bowl and cover it with plastic wrap. Press the plastic directly onto the surface of the pudding and chill in the refrigerator for at least 2 hours.
