– Peanut butter – Unsalted butter – Confectioners’ sugar  – Semisweet chocolate – Vegetable oil

Beat the peanut butter, butter, vanilla, and salt until smooth. Gradually add 3 cups of the confectioners’ sugar, mixing until stiff but smooth.

Form into balls

Using a tablespoonful at a time, roll into balls and place on baking sheet lined with parchment paper or wax paper. Refrigerate for about 30 minutes.

Melt the chocolate

Place the chocolate and oil in a microwave-safe bowl, and heat in 30-second intervals until smooth.

Dip the buckeyes

Use a toothpick to dip each peanut butter ball into the melted chocolate, leaving a bit of the peanut butter exposed at the top of the ball.

Chill

Refrigerate the buckeye balls until the chocolate is firm. They should be set after about 30 minutes.
