Sift together the cake flour and 1/2 cup of the sugar.

Beat the egg whites

Use an electric mixer with a whisk attachment to whip the egg whites until they’re foamy. Add the cream of tartar and salt, and continue mixing until soft peaks form.

Finish mixing

Fold in the vanilla, and then gradually fold in the flour mixture just until combined.

Bake

Spoon the batter into the pan, smoothing the top. Bake for 40 minutes, or until the cake is golden brown and the top springs back when pressed gently.

Cool

Invert the pan onto a wire rack and let the cake cool completely. Run a knife around the edges of the cooled cake and remove it from the pan.
