Filled with all the tropical flavors of the full-sized version, this mini hummingbird cake is smothered in cream cheese frosting and sprinkled with nuts!
You'll need bananas, crushed pineapple, and pecans for the cake, and cream cheese for the frosting.
Step 1. Whisk together the dry ingredients in large bowl. Add the wet ingredients, followed by the pineapple, bananas, and pecans.
Step 2. Divide the batter between two greased, floured, and parchment-lined round pans.
Step 3. Bake at 350ºF for 20-25 minutes. Let cool, then remove from the pans.
Step 4. Beat together the ingredients for the cream cheese frosting.
Step 5. Once the cake is completely cool, frost the layers and sprinkle toasted pecans over top.
Step 7. Slice and serve your mini hummingbird cake for a little bite of heaven!
