Beat the cream cheese and sugar, then beat in the eggs one at a time, followed by the vanilla.

Pour the cheesecake filling into the graham cracker crust and bake in a 325ºF oven for 40 minutes, or until a toothpick inserted into the center comes out clean.

Turn off the oven and leave the door open a crack. Let the cheesecake cool completely in the oven.

Bring the sugar and water to a boil in a pan set over medium heat. Continue to boil until it reaches 350ºF, or is amber in color.
