Whisk the flour, baking soda, baking powder, and salt in a mixing bowl.

Mix the dry ingredients

Mix the wet ingredients

Cream the butter and sugars then beat in the egg, egg yolk, and vanilla extract.

Finish the dough

Slowly mix the dry and wet ingredients, then fold in the toffee.

Form the cookies

Roll the dough into 2-tablespoon balls and place them on a parchment-lined baking sheet. Add more Heath bits to the tops, if desired.

One pan at a time, bake the cookies at 350ºF for 10-12 minutes, or until the edges are golden brown.
