This blueberry cookie recipe is made with yogurt in order to achieve the most tender and moist blueberry cookies! They're also packed with fresh blueberries and zesty lemon flavor.

Step 1. Prepare the blueberries by mixing them with lemon juice and a little bit of sugar in a small bowl.
Step 2. In another bowl, combine the flour, remaining sugar, baking powder, lemon zest, and salt.
Step 3. Next, add the butter to the flour mixture and mix it with a pastry blender, a fork, or two knives until coarse crumbs form.
Step 4. Then, stir the yogurt into the dough. Note that it will become quite thick at this point!
Step 5. Take the blueberries you prepared and gently stir them into the dough. Save a few to top the cookies with before you bake them if you like!
Step 6. Use something like a 3-tablespoon cookie scoop to portion the dough onto the cookie sheets. Make sure to leave at least 2 inches of space between each cookie!
Step 7. Add any extra blueberries and some coarse sugar to the top of your cookies, then bake them for 20-25 minutes!
Step 8. Let the cookie pans cool for 10-15 minutes on wire racks, then transfer the cookies to the racks to finish cooling.
