This Classic Chess Pie, with its flaky, homemade crust and buttery, smooth filling is out-of-this-world delicious, and a must-bake pie recipe!
This vanilla-infused pie is full of simple ingredients, and most of them are probably already in your pantry or fridge!
Step 1. Start with the crust: Combine the flour, sugar, and salt in a bowl.
Step 2. Next, incorporate the butter until the largest pieces are pea-sized. Add water a tablespoon at a time and mix until the dough forms.
Step 3. Shape your dough into a ball and then flatten it into a 1-inch-thick disk. Wrap it tightly in plastic wrap and chill it in the fridge for 2 hours.
Step 4. Once chilled, roll out the dough on a lightly-floured surface. Place it in a 9-inch pie pan, trim and crimp the edges, then chill the pan in the fridge while you make the filling.
Step 5. For the filling, mix butter, sugar, milk, eggs, and vanilla in a large bowl. Once well-combined, add in the cornmeal and salt.
Step 6. Pour the filling into the chilled pie crust, and bake for 55-60 minutes. Let your pie cool completely before slicing!
