I’m not sure when I first discovered cookie butter, but I’ve since made it a mission to take advantage of its wonderful spiced flavor as much as possible. And it’s a perfect addition to banana muffins!

The combination of cookie butter and bananas is a match made in baking heaven. The spices from the cookie butter make an ordinary batch of banana muffins something really special. The cookie butter is not an overwhelming flavor, but rather a more subtle approach that’s really just lovely.

For those of you unfamiliar with cookie butter, it’s a spread made from spiced cookies called speculaas. You may be most familiar with the brand Biscoff. You can find cookie butter alongside the other spreads like peanut butter and Nutella. There are several brands available, including Lotus Biscoff, Roland, and Trader Joe’s.

Cookie butter’s dark color contributes to the darker than normal color of these muffins. I love the look of them. Somehow that darker color makes me think of deeper, richer flavors, which is the case with the addition of cookie butter.

Quinn very quickly proclaimed these his favorite banana muffins. And you know he’s sampled a lot of baked goods over the years, so I take that as high praise. And I have to agree that kind of proclamation is warranted as they’re very, very good.

Cookie Butter Banana Muffins

Add a spiced twist to your banana muffins with these Cookie Butter Banana Muffins!

Ingredients

  • 2 cups (240g) all-purpose flour
  • 1/2 cup (100g) firmly packed light or dark brown sugar
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 ripe bananas, mashed (about 1 cup)
  • 3/4 cup milk
  • 1/2 cup (140g) cookie butter
  • 1/4 cup (56g) unsalted butter, melted and cooled
  • 2 large eggs, lightly beaten
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F. Grease or line 18 standard muffin cups.
  2. Combine the flour, brown sugar, baking soda, and salt. Make a well in the center. Set aside.
  3. Mix together the bananas, milk, cookie butter, butter, eggs, and vanilla.
  4. Add the banana mixture to the flour mixture. Mix just until combined.
  5. Divide the batter evenly among the prepared muffin cups, using about 3 tablespoons of batter to fill each cup about 3/4 full.
  6. Bake 20 to 25 minutes, or until the muffins are browned and a pick inserted into the center comes out clean.

  1. Hi Jennifer! I love all your recipes. I love to bake but I’m not so talented in the frosting part 🙂
    Anyway, just want to make sure that the muffin pan is the regular cupcake pan too? The
    muffins look tiny.

  2. Most muffin recipes call for regular cupcake pan. There interchangeable. You could probably use any size cupcake/muffin pan.

This recipe was also a big hit.  Even with someone who “doesn’t like banana bread recipes”.  The ones who love banana bread loved them and even a less than affectionate person could enjoy them.  I think the cookie butter gave them a balance that all could love if not really into bananas in baking.  Thanks!

  4. Can I bake these ad s loaf? If so, one loaf and any idea of the baking time?

  5. Just took these muffins out of the oven. So glad to HV recipe using cookie butter. When I HV Biscoff cookie butter in my cabinet, some how or another I look down at my hand and there is a spoon covered in Biscoff butter. I don’t know how it got there.
    I had some frozen bananas and took three out to thaw. Mixed all the ingredients together and into the oven they went. They are delicious but wish they had a bit more of the Biscoff flavor. (I do not like Nutella) Can I decrease the butter and add more cookie butter?
    I will surely make again. Thx much

    These are insanely good!
